Healthy, vegan, gluten free and guilt free perfect little bite sized heaven.
They're no bake & super simple. All you need is a food processor or high speed blender.
I like to store them in the freezer for the ultimate caramel texture. This way, they will totally last indefinitely!

How to make raw carrot balls:
All you really have to do is pulse everything together in a food processor! It's that easy. I like to soak the dates before hand to make sure they're extra gooey and easy to blend. If you're blessed with the date Gods of medjools in your area - then you probably don't need to! I think it makes it a little easy on the food processor too, though. Simply cover the dates with boiling water and let sit for 15-20 minutes while prepping the rest of your ingredients!

RAW CARROT CARAMEL BALLS
Prep time: 15 mins
Total time: 35 mins
Servings: Makes 16 balls
INGREDIENTS:
1 cup shredded carrots
1/2 cup dates
1/2 cup raisins
1 cup almond flour
1/2 cup nut butter
1/2 cup walnuts
1 tsp cinnamon powder
1/2 tsp ginger powder
1/4 tsp nutmeg powder
vanilla extract
1/2 cup unsweetened coconut flakes to roll in
INSTRUCTIONS:
Soak the dates in boiling water for 15-20 mins to hydrate.
Shred the carrots.
Add all of the ingredients (except for coconut flakes) to a food processor and pulse until a ball of dough forms.
Chill in fridge for 10-15 mins.
Fill a bowl with the coconut flakes.
Roll dough into bite size balls then place into the coconut flakes to cover completely.
Store in a tupperware in the fridge / freezer.
STORAGE:
Store in an airtight container in the fridge for up to a week or in the freezer indefinitely.
NOTES:
- Flour can be swapped out for oat flour, coconut flour or what ever else you have on hand.
- If consistency is too dry, add a bit of coconut oil. Similarly if you find it too wet, add more flour.
